    i wish you would have been more specific... drying should be at WHAT temperature, and for HOW LONG? you show that the reaction happens at 150-160C, yet show drying in a tea oven at 115C... and you mention it needs a long time but not too long... so... what does that mean?

    Unfortunately I have a low sensitivity to Theanine, so I don’t really notice the effect of Theanine from green tea, but I do notice the caffeine. I have taken Theanine supplements though, and it is a very, very unique and interesting drug/supplement. It makes me very calm and present, especially when combined with other things. I’m curious if matcha would have that effect on me since it has more Theanine from what I understand.

    The gut-brain axis is incredibly important. It has been shown to be involved with depression, autism, schizophrenia, etc. Taking an antibiotic called doxycycline gave me profound psychiatric side effects likely due to killing off the gut biome. These side effects are not overly common, but are very serious.

      l-theanine is the stress balancing one, yes. Works very well, btw, matcha has a lot of caffeine, but you feel energized and calm, not jittery

    Oh wow. Last year I traveled to China and we visited West Lake in Hangzhou. I had a friend living in Hangzhou who was going to take us all around the lake and explore. However, I caught covid and had no energy for anything strenuous. So he called an uber and brought me just outside the city to the terraced tea plantations where we rested at a tea house in the middle of a plantation and spent the whole day resting, chatting, and watching workers tending to the tea plants. At the tea plantation, they served us Dragonwell tea (longjing) sourced from the plantation we were at as well as many other teas. It was an amazing relaxing experience. They brought us many fruits and nuts as snacks - these fruits and nuts were simple, but the best tasting fruits and nuts I've ever had. They were very minimally seasoned if at all, but the freshness, quality, and the roasting process left an incredible taste that was beyond what I even knew was possible. And the tea was also amazing. It was so amazing that I got really into tea after returning home and now bring tea to work and brew a cup chinese style every morning. Hangzhou turns out to really specialize in tea culture and the slower way of life in China. And many people you meet from Hangzhou or who have lived in hangzhou all know alot about tea and how to enjoy the culture and process of drinking tea.

    Man, if you want to really experience the beauty of the Tang Dynasty, check out their poetry (with a good cup of tea). Even the translated work is just above and beyond most poets at least for me. It's all about loving life and beauty and joy and I just can't think of a better way to get into poetry than that.

    Are there any research on health risks of excessive consumption of kombucha? I have started making my own kombucha and I love it, but I had a really bad inflammation in my one shoulder this last week after I had really more kombucha that I probably should have had AND after I was on a 2 day water fast. This shoulders muscles are a bit more challenged than the other because it was not fixed properly after a break. I assume it must have been the excessive consumption of the buch because all other factors were constant.

    Just tried Pu'erh tea. It smells kind of fishy to me when brewed. It's not like there's fish in it, it's just the way the taste and aroma get transformed after brewing give that "fishy" impression. It's really weird. Definitely a very different taste profile. Anybody else get that impression?

    I’d love to hear about tea’s interaction w/ sleep quality. Not just whether l-Theanine calms you down before bed or not, but rather a discussion of the chronic effects of tea, the alterations in body + brain, and how these contribute to quality of sleep. Im curious whether something like this could be studied w/ reasonable controls. I’d be curious to see if a population of tea drinkers consistently report higher or lower hours of sleep as opposed to non-tea or no-caffeine drinkers and how this could relate to sleep quality.

    I was a bit sad that you didn't mention the tea tradition in East Frisia in Germany, which has today the highest per capita tea consumption in the world, using tea from mainly the Assam region of India. In East Frisia, tea was used as the main beverage after working in the marshlands of Northern Germany to dig for clay. The women would make tea at 3 PM for the workers because the local ground water was bad without cooking it so instead of drinking beer like they would do in the rest of the country, they drank tea instead. Today the 2 main tea brands are Thiele and Bünting which still follow the tradition and both have their own never changing mixture of broken assam teas
